Ed Mitchell: When you’re searching for that perfect bite of barbecue what you’re searching for is the right blend a mixture of smoke and flavor in the meat.
You don’t want the smoke to overpower the actual succulent of the flavor of the meat. You wanted to have a certain balance because the smoke is a flavor itself along with the other ingredients and it has to has all of that - has to balance out so you can overly smoke the product. The skill set and cooking the whole animal is that each part of the animal is different. The shoulder part is thicker, his hams are thicker, and you have to know how to maneuver the coals and the right temperature, the fire itself and then - the actual smoke from the wood that you use gives it the flavor. There are different wood flavors that give you different results.
Once it’s ready and then it’s time to eat. At that time, you begin to decide on what sauce that you’re going to use. Now, in and the Carolinas there’s two different versions there is a western-style sauce which is a tomato-based sauce. I’m from the eastern part of the Carolinas and we, the vinegar-based sauce I live and die by the fact. At the end of the American base is the best flavor because best that’s what I like and that’s where I’m from, and that’s traditional.
So, what you’re searching for is that perfect balance and when you find someone that can give that perfect balance yes that’s something worth waiting for.
I mean it’s I just can’t describe of and it’s just good.
